Chimichurri

This variation of Chimichurri is the variety found in Uruguay. It's great with simple barbecued steak or chicken.

Ingredients

  • 125g olive oil
  • 2 tbsp red wine vinegar
  • 25g parsley
  • 4 cloves garlic
  • 2 red chillies
  • 1 tsp oregano
  • 1 tsp salt
  • 1 tsp pepper

Directions

  1. Finely chop the chilli, garlic, and parsley. Combine all of the ingredients and leave to sit for a while – up to a day.
