Chimichurri

This variation of Chimichurri is the variety found in Uruguay. It's great with simple barbecued steak or chicken.
Ingredients
- 125g olive oil
- 2 tbsp red wine vinegar
- 25g parsley
- 4 cloves garlic
- 2 red chillies
- 1 tsp oregano
- 1 tsp salt
- 1 tsp pepper
Directions
- Finely chop the chilli, garlic, and parsley. Combine all of the ingredients and leave to sit for a while – up to a day.
